What are your thoughts on the U6+ vs U7 Pro? I’m not in an apartment so I probably don’t need 6 GHz? The U7 pro seems more modern and future proof, though but I do like the OpenWrt compatibility in case I don’t like stock firmware.

This sounds great! I’d love to see your config. I’m not using home manager, but have 1 non root user for all podman containers. 1 user per service seems like a great setup.
What is the Wi-Fi card for? What software are you using?
To clarify for others, that’s just for motor and AC loads. Rated capacity for resistive loads is 1800 W (15 A). Aside from a portable induction stovetop and possibly portable AC units, this is likely fine for most things people will connect to it. Its probably not a good fit for OP though.
